Gluten-Free Pizza Crust

1 tablespoon yeast
1 1/3 cup milk
1 teaspoon sugar
2 1/2 cup Gluten Free All Purpose Flour Mix
1 1/2 teaspoon Xantham Gum
1 Teaspoon Guar Gum
2 tsp olive oil
2 tsp cider vinegar
1 tsp salt

Heat the milk so that it is warm. Combine the milk with the sugar and yeast in a small mixing bowl and let this proof while you get the dry ingredients ready

Combine the flour mix, salt and gum. Add the oil and vinegar to the yeast mixture and then add all of liquid ingredients into the flour mixture and mix well.



Place dough onto heavily floured board (rice flour) and knead the dough for several minutes, (or use the dough hook on your mixer) working until the dough is pliable and not sticky. This dough will make two medium thin-crust pizzas or one large medium-crust pizza. Move to heated stone in your oven or place in a olive oil greased pan. Bake at 400 degrees until the top of the crust gets just a hint of color. Remove from oven. Add all your toppings, and then put back in the oven to bake until your toppings look done and cheese starts to brown.



I like to make several personel size pizza crusts and freeze after the first baking since there are only two of us.  This makes a quick meal really easy!
